介紹辦桌文化

辦桌,一種台灣民俗筵席活動,是外燴的一種,著名的台菜料理,許多都源自於辦桌文化。辦桌,即在家中或私人場所置辦酒席款待客人,是臺灣漢人宴請客人的主要方式之一。[1]台灣各種喜慶,如婚喪喜慶、新居入厝彌月慶生謝師餞行尾牙春酒廟會慶典、地方選舉等,都會舉行辦桌,邀請親朋好友及鄰里,一同前來共餐慶祝。辦桌通常是以在馬路邊搭棚架寺廟廣場學校操場或地方民眾活動中心作為場地,現場搭起爐灶與備菜的桌檯,現場烹煮食物,之後上桌,由參與者共同享用。
在辦桌活動中,由總舖師負責決定與主導整個宴會的菜色與流程。在總舖師之下,是一般的廚師,通常是跟在總舖師身邊的學徒。在專業的廚師之外,還有一些來幫忙切菜、洗碗、上菜、打掃的臨時幫傭,台灣南部稱水腳,北部則稱小工,或女工。

辦桌中,包括菜色選擇,上菜順序,以及座位安排等,都有許多古老禮俗的禁忌與規定需要遵循。

Taiwan has an very unique event called “Roadside Banquet”.
It is so special that all the foods on the banquet are cooked and served on the roadside in the tent.
It is the same as outdoor catering service, many round tables will be placed on the road, friends and family are all welcome to join it!
Usually happens when there are weddings, housewarming parties, religious celebrations.
Sometimes  in front of a temples, or in the school near by, usually located on the roadside.People come and enjoy the food together, sometime there will be shows on the stage.
The left over of food will be packed into small bags, for your friends & family to bring back home.

A roadside banquet (literally ‘to arrange tables’) is a traditional Taiwanese-style banquet. The phrase also refers to a form of catering business. Many well-known Taiwanese dishes originated in roadside banquet culture. Taiwanese people like to hold roadside banquets. Friends and family gather to celebrate important events in life, such as weddings, housewarming parties, newborn’s one month celebration, farewell parties, company year-end parties and religious celebrations. Roadside banquets often take place under huge tents set up beside roads. People also host these banquets at the squares in front of temples, at sports fields in schools or in local community centers. There will be stoves and kitchen counters in the tents, so the food can be cooked on location. Then the participants can enjoy the feast together.
